Bali's latest plant-based eatery signals the arrival of the future
This is not your average vegan-friendly Bali bar.
Inside the new creative hub named Potato Head Studios in Seminyak lies a boundary-pushing, plant-based Indonesian eatery that is unlike its neighbours. Here, old meets new, and an ultra-modern space juxtaposes a menu filled with nostalgic flavours.
Tanaman presents an innovative menu that pays tribute to the dishes of warungs, street venders and family kitchens, while using progressive techniques to produce exciting new dishes. Here, locally sourced produce from pesticide-free Bali farms informs the vibrant, plant-powered plates, alongside fermented drinks, health tonics, and native flora juices. Though very much contemporary, the food is comforting, wholesome and reminiscent of old-world Indonesian cuisine.
Executive chef Wayan Kresna Yasa and his team have created an evolving menu that includes the likes of Rendang Nangka (Jackfruit Rendang), which sees young jackfruit caramelised and braised in coconut milk for 16 hours. Dessert focus on delicious yet light offerings – think Bubur Sumsum, a sweet porridge covered in coconut sorbet and coconut nectar.
Beyond the cuisine, the space is a sight to behold: the dome-shaped structure features reflective floors, neon lighting and a vivid blue colour palette.
“At night, neon-coloured lights change, and the space appears as an enigmatic cave to experience flavours of a different kind” says OMA’s David Gianotten.
Tanaman is now welcoming in guests to its unique location, where you can eat, stay, play and unwind.
