We’ve all heard about gins that go from blue to pink, but did you know there’s a gin that goes from clear to cloudy?
Unlike other gins, Cotswolds’ Dry Gin isn’t chill-filtered, which means it retains all of its essential oils.  When the gin is mixed with ice or tonic, the oil solubility decreases, turning the liquid a cloudy white, just like absinthe, ouzo or pastis.
The British gin is made from nine botanicals including juniper, angelica, coriander seed, bay leaves, pink grapefruit, lime cardamom, peppercorn and Cotswolds lavender. The flavour profile is said to be clean and piney, with fresh citrus notes, backed up by lavender and eucalyptus from the bay leaf.
Cotswolds recommend mixing their dry gin with ice and tonic and garnishing with grapefruit or a fresh bay leaf.
